From The Albany Times Union

Emma Hearst, who grew up in the Capital Region and graduated from the Albany Academy and the Culinary Institute of America before opening her own Manhattan restaurant in December, has already been invited to cook at the James Beard House. Hearst’s Piedmontese lunch, scheduled for Friday, April 3, features some of Sorella’s signature dishes, including English muffins made with duck fat and slathered with chicken-liver mousse and carpaccio of beef from the Hearst ranch in California. The price is $75 for James Beard Foundation members, $90 for the rest of us. Call (212) 627-2308 for reservations.

More information can be found at the James Beard Foundation website.

Emma will be serving some of Sorella’s signature dishes including “Hearst Ranch Beef Carpaccio–Wrapped Grissini with Truffle Aïoli and Orange, Shallot, and Parsley Gremolata.”

Congratulations to Emma, who is a very talented chef with an extremely bright future.
