Beef from cattle raised on the central California ranch has been on the Piedmont-focused menu since opening day earlier this year—first as delicate carpaccio and currently as tender carne cruda, a Piedmontese take on beef tartare.

Notably absent from the festivities was ESPN, the sports programming juggernaut that accounts for roughly a third of Disney’s profits. There was, however, a subtle nod to Disney’s partner in ESPN, 20% owner Hearst Corp., which also is a partners with Disney on other cable channels including A&E and Lifetime: signage on a barbecue concession outside noted that it served only “grass-fed beef from Hearst Ranch”.

These grasslands look much the same as they did when George Hearst began buying up local real estate in the 1860s. Hearst leased small farms to Swiss dairymen until the Hearst family ceased the practice in the late 1890s. George Hearst raised beef cattle and horses on the ranch. His son, William Randolph Hearst, maintained the cattle and horse ranch, but also raised grain, grain hay, silage, field crops, fruit, and garden produce to supplement his pasture operations. Fruit, garden produce, and field crops were raised on a small scale. The ranch also featured a dairy, a poultry ranch, and a 2000 acre exotic animal park.

Grass-fed beef is not only delicious, it’s actually healthier, and for those who are interested, the natural way of eating beef. No hormones, antibiotics or harsh treatment of animals involved. (Hearst beef is certified humane treatment of the animals). But all that aside—it’s tender and delicious (and not all grass-fed beef I’ve had is). You do have to cook it less as there is less fat—you don’t want to eat it well done. I can’t say enough about this product—I order it often. Love the filets and sirloin steaks. It’s also the only ground beef & hamburger I’ll eat.

But my mother is so thoughtful, too. And a wonderful gift-giver she has always been. Sensitive to my feelings about animals and food-miles, she sent me grass-fed steaks from the Hearst Ranch in San Simeon, CA. I took the opportunity to make this Grilled Grass-fed Ribeye with Balsamic Caper Vinaigrette recipe from the latest Bon Appetit. Damn, steak is good.

A steak from the specials list was also very good: a richly flavored grass-fed Hearst Ranch filet mignon (yes, that Hearst – the 80,000 acre ranch surrounds Hearst Castle), which came with roasted potatoes and shishito peppers and a drizzle of the same salsa verde which accompanied the pork belly.

I can’t say I’ve actually had a true slow food meal. I’d like to but it’s virtually impossible to meet all the tenets of it around here. I can usually do organic and/or local (for the most part) and I can get grass fed, certified humane beef from Hearst Ranch, but some of the other tenets of it are almost impossible to live up to. BTW, does Slow Food include humane treatment of farm animals? I didn’t see it on the list in the other post.

Hearst Ranch Beef was mentioned in a recent review of the Inn at Morro Bay, which was one our first Hearst Ranch Beef customer in our Fresh program through Kaney Foods, our distributor in San Luis Obispo. Chef Tony Reeves, a great friend of Hearst Ranch Beef gets a nice mention as well.

Reeves also noted that patrons are always welcome to order anything from the Orchid menu in the Bay Club, and the menus actually share quite a few dishes. Among them are Ocean Rose abalone with creamed leek-lobster stuffed shell, black bean marinated Hearst Ranch skirt steak with Pan-Asian slaw, and sautéed exotic mushrooms with feta cheese wrapped in phyllo pastry.

By contrast, grass-fed meat, which comes from cattle that haven’t been fattened on grain towards the end of their lives, rarely earns the prime grade because it tends to be less marbled. But it can have a more complex flavor, with herbal notes that reflect the grass diet, and it is also healthier than corn-fed beef, with more omega-3 fatty acids and less saturated fat.
