Emma Hearst, who grew up in the Capital Region and graduated from the Albany Academy and the Culinary Institute of America before opening her own Manhattan restaurant in December, has already been invited to cook at the James Beard House. Hearst&#8217;s Piedmontese lunch, scheduled for Friday, April 3, features some of Sorella&#8217;s signature dishes, including English muffins made with duck fat and slathered with chicken-liver mousse and carpaccio of beef from the Hearst ranch in California.
