Cooking Our Grass-fed Rib roast (Boned and Netted)

Grass-fed beef cooks differently! We recommend a light coat of olive oil and searing in the roasting pan prior to cooking. Cooking times are approximately 30% shorter than for conventional beef. Your grass-fed roast will continue to cook even after it has been removed from the heat source, so remove the roast approximately 10 degrees before it reaches the recommended temperature and cover with aluminum foil; it will finish cooking on its own from the residual heat. Recommended final temperature for grass-fed meats: Remove the roast from the heat source 5-10 degrees prior to reaching the desired temperature and allow to finish cooking via residual heat.
