Hearst Ranch commissioned Mark Keller, Master of Meat, to craft the finest pasture-raised bacon West of the Pecos. Hickory smoked and maple-cured. Mark reached out to his colleagues at a traditional hog ranch in Eastern Washington state where the animals are raised outdoors in natural, social conditions. Fed non-GMO grains and natural forage, which never include soy or corn, these bellies are naturally marbled and free of any hormones or antibiotics.
